I like to flex and try new things, but I am very conservative with food. 

For years, I fried my plantains with just a sprinkle of salt. Then, one day, I ran out of salt and forgot to restock. I didn’t want to fry my plantains without it, but hunger got me. Out of frustration and despair, I decided to try it anyway. 

The result? 

They tasted better than any plantain I had ever fried with salt. That’s when I understood: sometimes the “perfect recipe” isn’t about precise replication but finding your own way.
